美國特選翼板羽下牛排
翼板肉和板腱肉都屬於肩胛部,顧名思義,就是在牛肩的位置。此外翼板肉又稱「 羽下」。
由於牛肩的部位有著常運動的棘下肌,因此肉質相對較緊實,但是翼板肉是肩胛部最軟的部位。
翼板肉的尾段有些許的油花和筋膜,肉質吃起來軟嫩,價格也比較平易近人,是日本料理店最愛的一塊肉,經常會將翼板肉做成炸牛排或是飯。
翼板牛排的料理方式有很多。可以將肉先醃過再去料理,肉質會變得更軟嫩多汁,
或是拿來香煎成牛排,建議的熟度是3-5分熟,更能突顯肉質的軟嫩度,再加點玫瑰鹽點綴就非常美味了
