板腱位於肩胛骨上方的肉,又稱嫩肩里肌,此部位的特點就是肉中間有一條透明的筋膜,牙口不好的可能會覺得不好咀嚼
因此,在料理前可以把中間的筋給修清起來,再下去香煎,吃起來會比較沒有負擔。
若是喜歡嚼勁有口感的人,這塊牛排再適合你不過,大火煎過後,吃起來非常地有嚼感
此外,板腱屬於比較平價、且物超所值的牛排,非常得深受大眾所愛
之前在世界各地旅遊時,我也會將板腱切成塊狀,拿來燉煮,料理成羅宋湯
中間的筋燉久了會變得非常的軟嫩,一咬下去,肉在嘴中直接化開,十分地可口美味,讓人垂涎三尺。
